How it works
Baking cooks food by dry heat in an oven. Structure comes from flour proteins (gluten), leavening (yeast, baking powder, or steam), eggs, and fats. Measuring by weight is more consistent than cups for flour. Mixing methods vary: creaming butter and sugar traps air for cookies; gentle folding keeps air in cakes; kneading develops gluten in bread.
